Menu Planner

I have been so busy this spring, I have not tended much to our garden. I would not say it is thriving but we have managed to pick a few tomatoes! Hoping we will have a few more...the branches are looking sorta bare. DSCN0192

Here goes with this week's menu planner....

Sunday - Ribs, Corn on the Cob & Baked Bean (Cookout with my in-laws who are moving from Richmond this week....sniff sniff!)

Monday - Grilled Chicken Caesar Salad

Tuesday - Goat Cheese & Black Bean Quesadilla with Mango Peach Salsa

Wednesday - Turkey Salisbury Steak with White Bean Mash

Thursday - BBQ Pork Tenderloin Sandwiches, French Fries

Friday - Homemade Chicken Ranch Pizza

A Tomato Frittata

We had this for dinner last night from Everyday Food Magazine and it was yummy and easy to make....good for a summer night. I served it with bacon and country bread buttered like toast.

Tomato-Pesto Frittata

8 large eggs
1/3 cup basil pesto (I use Classico Pesto found near tomato sauce)
coarse salt & pepper
1 cup shredded fresh mozzarella (4 oz), divided
1 teaspoon olive oil
2 small tomatoes, thinly sliced

Preheat over to 425 degrees. In a large bowl, lightly beat eggs. Stir in pesto, 3/4 teaspoon salt, 1/4 teaspoon pepper, and 3/4 cup mozzarella. In a 10-inch nonstick skillet (that can go in the oven), heat oil over medium heat. Add egg mixture and cook, stirring occasionally, 1 to 2 minutes. Arrange tomatoes in a single layer on top and sprinkle with remaining mozzarella.

Bake until puffed and center is just set, 10 to 12 minutes. Let sit 5 minutes, run a rubber spatula around edge and beneath frittata before transferring to a cutting boat. Cut into wedge and serve.

Menu Planner

Great Father's Day weekend. Today we headed down to Fishing Bay Yacht Club for a Pirate Party in honor of my father-in-law's birthday and Father's Day. It was a gorgeous day!

Camille starts art camp at the VMFA tomorrow. Yay! I think she is excited for some structure to her week. And here goes with this week's menu planer....

Monday...Corn Chowder with Zucchini & Orzo (I am going to add chicken to this as well), Avocado & Butter Leaf Salad, Bread

Tuesday....Tomato Presto Frittata, Bread & Bacon

Wednesday....Salmon with Mango Chimichuri, Rice, Spinach

Thursday...Night out

Friday...Chicken Fajitas

My mom gave me a bunch of Everyday Food magazines and that is where a lot of the recipes this week are coming from. I am having trouble finding links...if the meals are good, I will post recipes.

Finally....a menu planner

Hello blog...I've missed you. Things have been crazy the past few weeks and blogging has been low on the priority list. But I am hoping to get back in the swing of things.
