ALDI Recipes


I took my first trip to our new RVA ALDI last month. After visiting the store and then later looking around on their website, I discovered a bunch of great recipes posted on the site. I am always looking for new dinner ideas for my weekly menu planner so I decided to try out a few dishes.

We have a love of Mexican food at our house so first up was Chicken Enchilada Casserole with Corn Salsa. I highly recommend this recipe. It is a great weeknight meal that doesn’t require a ton of preparation.

I grabbed all of these ingredients at the ALDI on Parham Road. 


All the products were as expected in terms of taste. I had no issues with the quality of the meat, produce or dairy. The chicken breasts were $5.40 which I think is fairy affordable for a 3 pack of fresh poultry. The canned corn was only 49 cents. The tortilla chips were very inexpensive at $1.19.


And voila here is our final product…Chicken Enchilada Casserole with Corn Salsa!


I am also so happy to have this easy summer side dish. We will definitely be adding this Corn Salsa to the meal rotation…Michael loved it!


We also tried the Lighter Baked Gnocchi Bolognese and it was really tasty!

There are hundreds of recipes on the ALDI website and they even have a Kid Craves section and a seasonal section with dishes for different holidays. I bought all of the ingredients to make Chocolate Peanut Butter Ice Cream Sandwiches with Camille and Clyde. Can’t wait to try them.  YUM! Be sure to check out the ALDI blog for even more recipes.
