Menu Planner

Sunday - Spaghetti with Meat Sauce and Mozzarella

Monday - Cream Cheese and Black Bean Chicken rolled in tortillas with avocado, tomato and green onion topping (recipe below)

Tuesday - Dinner out, Camille's spring program at school

Wednesday - Chicken Pita with Tzatziki, Cous Cous

Thursday - World's Best Lasagne (leftovers from a previous week in my freezer)

Black Bean Crock pot Chicken

Yield: 4 servings
4-5 boneless chicken breasts, frozen
1 can black bean
1 can corn (or 1-1/2 cup frozen corn)
1 jar salsa, any kind (~14 oz)
1 package FF cream cheese (8 oz)

Take 4-5 frozen boneless chicken breasts put into crock pot. Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.

Keep in crock-pot on high for about 4-5 hours or until chicken is cooked. Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
