Menu Planner

Here goes....

Sunday - Father's Day Dinner: Filets on the Grills, Nancy's Onion Pie (recipe below), Asparagus

Monday - Leftovers

Tuesday - Chicken Fajitas

Wednesday - Homemade Pizza with Boboli Crust

Thursday - Oven  Chicken Risotto

Friday - Summer Corn & White Bean  Soup (from the  freezer), Grilled Cheese

Nancy's Onion Pie

1 cup Ritz Crackers finely crushed
1/4 cup Butter &  2 tbsp butter
2 Eggs
3/4 cup milk
3/4 tsp salt, dash of  pepper
1/4 cup grated sharp cheese
2 cups Vidalia (or other sweet onion) thinly sliced

Mix cracker crumbs with 1/4 c. butter. Press into 8-inch pie plate. Saute onions in 2 tbsp of butter until translucent but not brown. Spoon into crust. Beat eggs with milk, salt, pepper. Pour this mixture over onions. Sprinkle with cheese  and  a little paprika. Bake at 350 degrees for 30 minutes.
