A lunch idea

I get so tired of my lunch options. It is normally a turkey sandwich. I try to vary the bread each week but it still gets boring. I eat leftovers sometimes depending on what's for dinner that week. Recently I ran across this recipe for a cauliflower, white bean and feta salad. I made it yesterday to eat for the week and it is so DELICIOUS!

In other news, I had my first cup of coffee yesterday ever! Yes, you read that right. I normally wake up to a 12 oz Coca Cola Classic...not diet, the real deal. I normally have one with breakfast and one with lunch and wine with dinner...ha! I am trying to cut back to one coke a day and then perhaps none. I didn't like the coffee very much yesterday but much better today with a little more creamer and 1 teaspoon of sugar.

And finally....all my hard work making changes to my living and dining room (read more here and here) and Clyde comes in and re-decorates. I love what he did with all those little motorcycles.


  1. I can't wait to try the salad. Looks YUMMMY. I like my morning coffee with 2 tsp raw sugar and 2 Tbs half and half. It's more like a melted coffee milkshake. Haha. :)

  2. I just started drinking coffee in the fall! Decided I like Starbucks French Roast with a good splash of the toddler's whole milk and a tiny sprinkle of Splenda :) And I get so bored with lunch too - thanks for the recipe!
