Weekend Recap & Menu Planner

Another action packed weekend....I love the fall! Michael has been wanting to take the kids camping. Friday night...we had a dress rehearsal and camped in our backyard. It was fun, not the most restful night sleep I have ever had, but fun nonetheless. I actually think camping in the woods would be more peaceful that our backyard. We live near a college and as expected those kids were partying on Friday night and I swear someone may have stolen a police car and was trying out all the sounds!



Saturday morning after soccer, we headed to the Ashland Berry Farm for pumpkin picking! This is one of my favorite fall activities in RVA!
 
 



I have been to the library again checking out cookbooks. This week I am trying recipes from Curtis Stone's What's For Dinner and Gwyneth Paltrow's It's All Good. Here goes with this week's menu planner....

Sunday....Curtis Stone's Korean Steak Tacos

Monday...Curtis Stone's Orecchiette with Brown Butter, Broccoli, Pine Nuts & Basil

Tuesday...Pioneer Woman's White Chicken Chili (from the freezer), Salad and Cheddar Zucchini Corn Muffins (also from the freezer)

Wednesday....Baked Salmon with Gwyneth Paltrow's Roasted Cauliflower & Chickpeas & Parsley

Thursday...Taco Pizza

  1. I was just telling my boyfriend that I wanted to go pumpkin picking!! Hopefully we can get there sometime soon before they're all gone! :)
