Weekend Recap & Menu Planner

We are having a great weekend! Camille and Clyde did a drama camp with SPARC for the past two weeks. They really enjoyed it and Friday was their performance of the Jungle Book. It was so cute! My pictures didn't turn out but they did an awesome job.

We completed some more home projects....hooks for coats and book bags hung in the mudroom and a bench for tying and storing shoes assembled! Can't believe this is our last week of summer before school starts. With our move, the summer has flown by! We plan to sneak in one last beach trip to Sandbridge before school starts. YAY!

I bought a best of Cooking Light cookbook last week at the Goodwill. Two of the recipes on this week's menu planner are from that book. Excited to try them!

I am posting last night's steak taco's recipe because it is so delicious!

Saturday - Steak Tacos (We use the marinade in this recipe and M makes his own pico de gallo. We serve with chopped iceberg lettuce & avocado slices)

Sunday - Cumin Dusted Chicken Breasts with Guacamole Sauce, Refried Beans, Corn on the Cob

Monday - Roasted Salmon with Fresh Vegetables

Tuesday - Night off! (PTA Committee Meeting)

Wednesday - Balsamic Pork Loin with Parmesan Risotto, Sauteed Squash & Zucchini

Hope you have a great Sunday! I am eyeing this light fixture for my foyer from World Market. I may or may not be waiting for the clock to turn 10 am and the store to open! I hope I can make this work in our space!

Update: I didn't end up getting the fixture. I love it but in person it didn't look quite as good and I don't think it will work in our foyer. :(
