Weekend Recap & Menu Planner

The spring weekends seem to fly by! Ours was a busy one that involved soccer, our school carnival and an event for the World Pediatric Project last night.

Today I have been trying to get organized for the week! Here goes with this week's menu planner...

Sunday...Hamburgers, Hotdogs, Baked Beans, Corn on the Cob


Monday....Minute Steaks with Barbecue-Butter Sauce, Crispy Potato Cakes, Green Beans (Salt, Pepper, Olive Oil, Sliced Almonds on a Baking Sheet. Cook at 350 degrees for 15-20 minutes.)

Tuesday....Tortellini, Chicken and Arugula Salad

Wednesday...No Work Chicken, Couscous (recipe below), Roasted Broccoli, Blueberry Muffins


Thursday...Spring Minestrone (this was good but a little bland, next time I will use chicken stock or regular instead of low-sodium chicken broth), Grilled Cheese Sandwiches

Couscous...heat a drizzle of olive oil in a medium pot over medium heat. Add 2-3 tablespoons of chopped shallot and cook until softened, 2-3 minutes, tossing. Stir in 1 cup of Israeli couscous, 1.5 cups of chicken broth and a large pinch of salt. Bring to a boil, cover and reduce heat. Gently simmer until tender, 10-12 minutes.
