Menu Planner

Sunday - Mozzarella & Prosciutto Panini & Italian Sausage Soup frozen and leftover from another week.
Monday - Kickin' Chicken with a Crunch, Sweet Corn & Zucchini
Tuesday - Pork Tenderloin, Roasted Potatoes, Asparagus
Wednesday - Kate's Italian Sausage Casserole (recipe below)
Thursday - Chicken Rollatini with a side of pasta and bread

Kate's Italian Sausage Casserole
1 cup of penne pasta
1 lb of Italian Sausage
1 small onion chopped
1 clove of garlic minced
1 can of diced tomato
1/2 cup to 3/4 cup of sour cream
1 tsp oregano
1 cup shredded mozzarella
1 cup Parmesan

Cook pasta according to package directions. Cook sausage and drain, return to pan. Add onion and garlic saute until tender. Combine tomato and sour cream in baking dish. Add pasta and sausage mixture, oregano, mozzarella. Stir together. Top with Parmesan (shredded or grated). Bake at 350 degrees for 30 minutes. Can also add fresh spinach. Also, can use whole wheat pasta and light sour cream.
