Turkey Salisbury Steak with White Bean Mash

1 lb uncooked ground turkey
1 envelope beef flavored onion soup mix
2 tablespoon Worcestershire sauce
2 teaspoons Olive oil
1 clove garlic minced
1 tablespoon butter
2 cups sliced fresh mushrooms
3/4 cup reduced sodium chicken broth
1/4 cup tomato paste

In a large bowl, combine ground turkey, 2 tablespoons of the onion soup mix, and 1 tablespoon of the Worcestershire sauce; mix well. Shape into 4 oval patties about 1/2 inch thick.

In a large skillet, cook the patties in hot oil on medium high heat for 3 minutes or until browned, turning once. Remove from skillet, set aside.

In hot skillet, cook garlic in butter for 30 seconds. Add mushrooms. Cook and stir 5 minutes or until tender. Add broth, tomato paste, remaining soup mix, and remaining Worcestershire sauce. Stir, scraping up brown bits.

Return patties to skillet, spoon sauce over patties. Cover and cook on medium high heat about 8 minutes or until done (160 degrees), spooning sauce over patties through cooking time.

White Bean Mash: In a large saucepan, cook 2 cloves of garlic minced in 2 tablespoons of hot oil for 1 minute. Stir in two (15 oz) cans of white beans, rinced and drained. Coarsely mash beans. Stir in chicken broth to moisten beans (up to 1/4 cup). Stir in 1/2 teaspoon of dried thyme and 1 teaspoon of lemon juice. Season to taste with salt and pepper. Heat through. Drizzle with olive oil.

White Pizza

1 cup Asiago or Parmesan

1 cup Mozzarella

1/3 cup Classico Pesto

1 Tomato, thinly sliced

Spread pizza with pesto. Top with cheeses and thinly slice tomatoes. Cook for 8 minutes at 450 degrees.
