Weekend Recap & Menu Planner

Happy Monday! So excited to have both kids in school this morning and Michael home from work! It never works out like that.

We had a great weekend. Saturday night, we went to dinner with friends at Pearl Raw Bar in the Fan. My food was delicious. I definitely recommend giving it a try! Afterwards, we went to JW Sullivans which used to be Easy Street back in our pre-kids days. It was fun but hilarious, we were leaving to go home just when they started carding people at the door. Oh how times change.

Last night, Camille and I went to see Cinderella preformed by the Richmond Ballet. Last week's performance was rescheduled because of snow and we had SWEET friends give us their tickets because they couldn't attend the new date. We both loved it! It was long so I wasn't sure if Camille would make it through the whole performance. I gave her the option of leaving after Act 2 because it was getting past her bedtime but she wanted to stay. I haven't seen a ballet since the Nutcracker as a child, I really enjoyed it. I thought it was a great performance.

Monday - Chicken Enchilada Casserole

Tuesday - Greek Style Minestrone with Turkey & Feta Meatballs

Wednesday - Collard Green Carbonara (I bought Kale to substitute for Collard Greens this time)

Thursday - Turkey Tenderloin, Parmesan Risotto, Broccoli

    1. Hi Liz! We have made it before with the collard greens and it was pretty good but I wasn't wild about the collard green taste so I am excited to try it with kale. I will let you know.

  2. I agree; that carbonara recipe sounds delish! I'm in a [rare] cooking mood...maybe I'll attempt it!
